Lemon Mint Slush

It’s a fair bit of work — you have to simmer lemon juice, honey, water, and mint until all the flavors meld, then strain the blend into an ice cube tray. But if you make a huge batch of that and fill your freezer, the rest is easy and can be made anytime.

Just pop a few of the lemon-mint-honey ice cubes out, blend ’em for a few seconds with a bit of water, and then pour the resulting slushy into a glass with a healthy dose of gin and you’ve got a summery cocktail in all of thirty seconds.
